1 tbsp tapioca starch or cornstarch
3/4 tsp baking soda
1 tsp salt
1/4 cup honey, maple syrup or agave (60ml)
1/4 cup unsweetened applesauce (65g)
1/2 cup natural peanut butter (125g)
1 egg
1 tsp vanilla extract
3 oz dark chocolate (85g)
2.5 tbsp heavy cream or coconut milk (35ml)

Prepare the chocolate kisses: In a small bowl, add chopped dark chocolate and pour with boiling hot heavy cream or coconut milk. Let it sit for 2-3 minutes, then stir until smooth chocolate ganache is formed. Wait until the ganache is thick enough to be piped, then transfer into a piping bag and pipe in the shape of original Hershey kisses. Let it set for 30 minutes at room temperature, and put it in the freezer while the cookies are baking.

In a bowl, add room temperature peanut butter, liquid sweetener, and applesauce; beat with a mixer for 1 minute.

Add vanilla extract and egg, and continue to beat with a mixer.

In a separate bowl, combine all the dry ingredients: ground oats, rice flour, cornstarch, baking soda, and salt.
