Irani Chai

3 tablespoon tea leaves
2 cups whole milk
4 cardamom pods
1 inch ginger
2 tablespoon sugar
1 cup chilled water

Pound ginger and cardamom using a mortar and pestle.

Take a small bowl and put a white cloth inside and secure it with a rubber band or tie.

Add tea powder, pounded ginger, cardamom, and 1 cup of water to the bowl and mix well.

Fill the Instant Pot inner pan with 2 cups of water.

Place the tea bowl on the Instant Pot trivet and place it inside the Instant Pot.

Cover and pressure cook on high pressure for 5 minutes.

Allow the pressure to release naturally.

In the meantime, heat milk in a pan and bring it to a boil, then simmer for 5 minutes.

Once pressure releases naturally, open the Instant Pot and remove the trivet. Slowly remove and squeeze the tea.

Add the strong decoction (tea extract) to the simmering milk and bring it to a boil.

Just before serving, add sugar and dissolve according to your taste.

Transfer to serving cup and top with the reserved coagulated milk.
