Continue whisking until it forms stiff peaks.
Prepare a square or rectangular tin by lining it with cling film, ensuring there is overhang.
Pour the ice cream mixture into the lined tin and level it off with an offset spatula.
Place the tin in the freezer for about 4 hours until the ice cream is set.
In a separate bowl, add 1 cup brown sugar and 1/2 cup granulated sugar, then add 1 cup softened butter and cream together until light and fluffy.
Add 1 egg and 1 teaspoon caramel extract, mixing until smooth.
Add 2 cups all-purpose flour and 1 teaspoon baking powder, mixing on low speed until just combined.
Fold in 1 cup butterscotch fudge pieces, being careful not to overmix the dough.
Wrap the dough in cling film and refrigerate for about 2 hours until firm.
Flour a surface and roll out the chilled dough to about 1/2 centimeter thick.
Use a lightning bolt cookie cutter to cut out shapes from the dough.
Transfer the cut cookies onto a greased and lined baking tray.
Chill the cookies in the fridge for 30 minutes before baking.
Preheat the oven to 180 degrees Celsius.
Bake the cookies for 20 minutes until light and golden brown.
Remove the ice cream from the freezer and let it sit for a couple of minutes to soften slightly.
Cut the ice cream into lightning bolt shapes using the same cookie cutter.
