Preheat oven to 450°F (232°C).
Roll out the pie crust and fit it into a tart pan, trimming excess dough.
Poke holes in the crust with a fork to prevent it from puffing up while baking.
Line the crust with parchment paper and fill with beans as pie weights.
Bake the crust for 10-15 minutes until golden brown.
Remove the crust from the oven and take out the beans, letting it cool.
Slice shallots finely and set aside.
Cut bacon into small strips about half an inch wide.
Slice chives finely.
Grate the cheese to yield about 1 cup.
In a pan, heat over medium heat and add bacon, cooking until crispy.
Remove bacon and drain excess fat, leaving some in the pan.
Add 1 tbsp of butter to the pan and melt it with the bacon fat, then add shallots and cook until soft.
Return bacon to the pan and mix, then set aside to cool.
In a bowl, crack eggs and whisk them.
Add heavy cream to the eggs and mix well.
Season with salt, pepper, and nutmeg, then mix in most of the chives, reserving some for garnish.
Spread the bacon and shallots mixture in the cooled pie crust.
Add grated cheese on top of the bacon and shallots.
Pour the egg and cream mixture over the cheese and filling.
Reduce oven temperature to 325°F (163°C) and bake for 20-30 minutes until custard is set.
Let the quiche cool for 30 minutes at room temperature before slicing.
Garnish with reserved chives before serving.
