100g Parmesan or pecorino cheese
4 eggs
350g spaghetti
2 garlic cloves
2 tbsp butter
1 tsp salt
2 tsp freshly grated black pepper
1 bunch of parsley

Cook pasta according to the package instructions until al dente.

Chop the pancetta, squash the garlic with the blade of a knife.

Melt the butter on a large frying pan. Fry the pancetta with the garlic on a medium heat, stir often, until the pancetta is crispy. Remove the garlic.

In the mean time, beat the eggs in a medium bowl, add grated cheese and season with salt and black pepper. Mix and set aside.

Put cooked pasta in the frying pan with the pancetta and stir well.

Take the pan off the heat and quickly pour the egg mixture in. Lift up the spaghetti so everything is covered with the eggs and cheese easily. It should be thick but not scrambled. If you want, season with a little salt and generous amount of pepper.

Serve immediately with a little sprinkling of the cheese and freshly grated black pepper. Decorate with chopped parsley.
