2 cups (250g) strong bread flour
1 1/4 sticks (150g) cold unsalted butter, cubed
1 tbsp (15ml) milk
1 egg yolk

Dissolve 25g fresh yeast and 3 tbsp sugar in 1/2 cup lukewarm milk and set aside to cool completely.
