Start by making the yakisoba sauce: In a bowl, combine 1 teaspoon sugar, 2 teaspoons mirin, 1 tablespoon soy sauce, 1 tablespoon ketchup, 2 tablespoons oyster sauce, and 3 tablespoons Worcestershire sauce. Mix until the sugar dissolves.

Prepare the vegetables: Cut the onion in half vertically and slice it into 1/8 to 1/4 inch thickness.

Julienne the peeled carrot into 2-inch strips by cutting diagonally every 1/8 of an inch and then cutting into strips.

Remove the stems from the shiitake mushrooms and slice them into 1/4 inch thickness.
