1

Julienne a carrot and slice half an onion.

2

Chop spring onions into a chunky rough chop.

3

Rehydrate dried shiitake mushrooms and finely slice them, then break fresh shiitake mushrooms by hand.

4

Chop cabbage into bite-sized pieces.

5

Freeze pork belly for 30 minutes to firm it up, then slice into thin pieces (about half a centimeter thick).

6

Prepare the sauce by mixing Japanese Worcestershire sauce, ketchup, light soy sauce, oyster sauce, sugar, and black pepper in a bowl.

7

Heat a wok until smoking and add a couple of tablespoons of vegetable oil.

8

Add sliced pork belly to the hot wok and spread it out to brown evenly.

9

Once browned, remove pork belly and drain excess oil, leaving some fat in the wok.

10

Add sliced onions to the wok and caramelize them until they have color.

11

Add chopped cabbage and stir for 20-30 seconds to retain some crunch, then add julienned carrots and fresh shiitake mushrooms.

12

Stir and let cook without constant stirring to build heat in the wok.

13

Add rehydrated shiitake mushrooms and pre-cooked yakisoba noodles, mixing well for about 30 seconds.

14

Add chopped spring onions and return the pork belly to the wok.

15

Pour the prepared sauce over the mixture and stir to coat everything evenly.

16

Plate the yakisoba and garnish with sesame seeds.
