Heat a large non-stick pan over medium heat and add a drizzle of oil.

Add 140 g of thinly sliced pork belly and 1/4 of a thinly sliced onion; season with salt and pepper and fry until the onion is soft and dark and the pork is slightly crispy.

While the pork and onion cook, boil water in a separate pot for the noodles.

Add 2 portions of ramen noodles to the boiling water, cooking them for 10 seconds less than the package instructions.

Once cooked, drain the noodles and rinse under cold water to remove excess starch and stop further cooking.

Toss the drained noodles with a bit of cooking oil to prevent clumping.

Transfer the cooked pork and onions to a plate.

In the same pan, add the noodles and fry them until they become crispy.

In a small bowl, mix 1 tbsp soy sauce, 1 tbsp oyster sauce, 1/2 tbsp Worcestershire sauce, 1/2 tbsp sake, 1 tsp ketchup, 1/2 tsp sugar, 1 tsp toasted sesame oil, and 1/4 tsp curry powder to make the sauce.

Pour the sauce over the crispy noodles and mix until coated.

Push the noodles to one side and add the reserved pork and onions along with 50 g of cabbage, tearing the cabbage into rough pieces by hand.

Cook everything together until evenly mixed and heated through.

Remove from heat and garnish with katsuobushi and red pickled ginger before serving.
