Combine 4 tablespoons of water, 3 tablespoons of ketchup, 3 tablespoons of okonomiyaki sauce, 1 tablespoon of sake, 1 tablespoon of soy sauce, and 1 teaspoon of sugar in a small bowl and whisk together; set aside.

Cut 8 slices of maple smoked bacon into 1-inch pieces and cook in a pan over medium-high heat until slightly cooked, keeping some pieces chewy.

Keep the mixture on steady heat to intensify the sauce, allowing it to caramelize and thicken while stirring to get a slight char on the noodles.
