Crack 2 eggs into a bowl and add 1 teaspoon of pink Himalayan salt.
Whisk the eggs with salt and optional sugar until the salt dissolves.
Add 1 cup of water and 1 cup of whole milk to the egg mixture.
Add 2.5 cups of sparkling water to the mixture for fluffiness.
Gradually add flour to the mixture while whisking to avoid lumps.
Let the batter rest in the fridge for a minimum of 1 hour.
Heat a crepe pan or skillet over medium-high heat and spread butter on it.
Pour about 1/4 cup of batter into the pan and swirl to cover the bottom.
Cook until the edges look dry and bubbles form, then flip and cook for another minute.
Repeat with remaining batter, adding butter as needed.
Fill crepes with feta cheese, sautéed mushrooms, ham, or young cheese with crushed walnuts and honey, then roll them up.
