Cut 4 medium golden potatoes into little cubes and set aside.
Shred 1 medium onion and set aside.
Chop 3 cloves of garlic and set aside.
Cut 3 scallions and set aside.
Heat a skillet and add 3 tablespoons of olive oil.
Add the cubed potatoes to the skillet and sauté until slightly tender, about 8 to 10 minutes.
Sprinkle about 1/8 teaspoon of sea salt and 1/8 teaspoon of black pepper over the potatoes and mix.
Shred the onion and add it to the potatoes after they have cooked for about 8 to 10 minutes.
Cook the mixture for about 2 minutes to allow the water from the onion to evaporate.
Add 3 tablespoons of fresh chopped dill to the mixture and stir.
Add 3 cloves of garlic and the chopped scallions to the skillet and mix for about 1 minute.
Add 6 cups of fresh spinach to the skillet and mix until it wilts down, about 2 minutes.
Once the spinach has wilted, add a little more salt for seasoning and mix.
Shut off the heat and set the spinach and potato mixture aside.
In a bowl, scramble 4 eggs with a dash of salt and pepper.
Add 1/4 cup of whole milk to the eggs and mix.
Crumble 1/2 cup of feta cheese, add 1/2 cup of shredded parmesan, and 1 cup of shredded mozzarella to the egg mixture and blend.
Grease a 2.5-quart round dish and fill it with the spinach, potato, and cheese mixture.
Pour the egg mixture over the top and gently push it down to combine.
Sprinkle smoked paprika on top and place in the oven at 325°F for approximately 45 to 50 minutes.
Check for doneness by jiggling; if it jiggles, it needs more time.
Bake for a total of 55 minutes before removing from the oven.
