Chop one small onion.
Mince three cloves of garlic.
Preheat the oven to 375°F.
In a medium skillet over medium heat, melt half a cup of butter.
Sauté the onion and garlic until lightly browned, about 7 minutes.
Drain and dry 1 10 oz package of thawed frozen chopped spinach.
Stir the spinach into the onions.
Add one 4.5 oz can of drained sliced mushrooms.
Add one 6 oz package of crumbled herb and garlic feta cheese.
Add half a cup of shredded cheddar cheese.
Season the mixture with salt and pepper.
Spoon the mixture onto an unbaked 9in deep dish pie crust.
In a medium bowl, add together four eggs and one cup of milk.
Whisk the egg and milk mixture and season lightly with salt and pepper.
Pour the egg mixture over the cheese and spinach mixture in the pie shell slowly and carefully, allowing it to combine thoroughly.
Bake the quiche in the preheated oven for 15 minutes.
After 15 minutes, sprinkle the top of the quiche with about half a cup of cheddar cheese.
Return the quiche to the oven for another 35 to 40 minutes until set in the center.
Allow the quiche to rest for 10 minutes before serving.
