Preheat the oven to 400°F and line a baking sheet with foil.
In a large bowl, add 1/2 cup of light mayonnaise and 1/2 cup of reduced fat milk; whisk together until smooth.
Add 4 lightly beaten eggs to the mixture and mix everything together well.
Squeeze all the liquid from a 10 oz package of thawed chopped fresh spinach.
Place a 9-inch unbaked pie shell on the prepared baking sheet and add a layer of spinach.
Scatter 8 oz of shredded cheddar cheese over the spinach; you can use mild, sharp, or white cheddar.
Add a layer of chopped yellow onion on top of the cheese.
Build another layer using the spinach, cheese, and onions.
Pour the egg mixture over the top of the layers.
Lightly grease a sheet of foil with cooking spray and cover the quiche.
Bake in the preheated oven for 45 minutes.
After 45 minutes, remove the foil cover and bake until the top is golden brown and the filling is set for an additional 10 to 15 minutes.
Let it cool slightly before slicing.
