Traditionally enjoyed during breakfast or as a snack, these cheesy bread rolls reflect the country's rich culinary heritage and the use of local ingredients. Today, they are popular throughout Colombia and are often served warm, showcasing their delightful texture and flavor.

Add 1 cup of corn flour to a mixing bowl.
Add 2 tablespoons of sugar, 1 teaspoon of baking powder, and 1/4 teaspoon of salt to the bowl.
Mix all the dry ingredients together using a whisk until well incorporated.
Add 400 grams (about 4 cups) of queso fresco to the dry ingredients and mix until it resembles sand and is not sticking together.
Add 1 large egg to the mixture and use your hands to incorporate it thoroughly.
Gradually add 6 tablespoons of fresh milk, mixing until the dough starts to stick together and form a ball.
Once the dough is formed, transfer it to a clean surface for shaping.
Divide the dough into 8 to 10 equal pieces and shape each piece into a ball, then flatten slightly to form a dome shape.
Place the shaped almojábanas on a baking sheet lined with silicone or parchment paper, spacing them out.
Preheat the oven to 450°F (232°C) and bake for 15-20 minutes, checking for a golden color.
After baking, let the almojábanas cool for about 10 minutes before serving.
