Preheat the oven to 350°F.

Brush a large rimmed baking sheet with about 1.5 teaspoons of olive oil.

Cut a piece of parchment to fit the bottom of the baking sheet, allowing it to overhang the edges, and oil the parchment with a little more olive oil.

In a medium-sized bowl, combine 1 cup of milk and 3/4 cup of flour, whisking until smooth.

Crack 8 eggs into the bowl, add 1 teaspoon of salt and fresh ground pepper, and whisk until fully combined.

Chop about 1/4 cup of fresh chives and add to the egg mixture, whisking to combine.

Chop 4 slices of ham into small pieces and set aside.

Pour the egg mixture into the center of the prepared baking sheet, moving the pan to spread the eggs to all corners.
