Line a 15x10 inch pan with aluminum foil and grease the foil.
In a large bowl, combine 3/4 cup of milk and 4 oz of softened cream cheese, whisking until smooth.
Add 1/4 teaspoon of salt and 2 tablespoons of all-purpose flour to the mixture and blend until smooth, then set aside.
In a separate large bowl, beat 12 eggs until well mixed.
Add the milk and cream cheese mixture to the beaten eggs and mix until smooth.
Pour the egg mixture into the prepared pan.
Bake at 375°F for 30 to 35 minutes, checking for doneness as the time may vary based on the pan used.
Once baked, spread 2 tablespoons of dijon mustard over the top of the eggs.
Sprinkle 1/2 cup of thinly sliced green onions over the mustard.
Add 2 cups of finely chopped fully cooked ham and 2 cups of shredded cheddar cheese on top.
Roll the egg mixture up from the short end using the aluminum foil as a guide.
Place the rolled omelet back into the baking dish and sprinkle with additional cheese if desired.
Return to the oven at 375°F for 4 to 5 minutes until heated through and cheese is melted.
Slice and serve.
