Boil the potatoes for about 6 to 7 minutes until soft, adding eggs to the same pot to hard-boil them.
Once cooked, drain the potatoes and eggs, then let them cool.
Peel the hard-boiled eggs and cut them into large chunks.
In a large bowl, combine the cooled potatoes, chopped mixed peppers, and onion marmalade.
Add olive oil to the mixture for moisture.
Mix in the mayonnaise and cider vinegar, and season with freshly milled black pepper.
Gently fold in the chunks of hard-boiled eggs and chopped coriander.
