Add 2 cups of arborio rice (unrinsed) to the Instant Pot.
Pour in 5 cups of garlic broth into the Instant Pot with the rice.
Ensure the liner pot is inside the Instant Pot and secure the lid, setting the valve to sealing position.
Press the pressure cook or manual button and set for 6 minutes at high pressure.
After cooking, perform a quick release of the steam and remove the lid from the Instant Pot.
Stir the risotto to check the consistency; it should have absorbed most of the broth.
Add 4 tablespoons of salted butter and 1 cup of grated pecorino romano cheese or grated parmesan cheese to the risotto.
Stir in 1 tablespoon of black pepper and mix until the butter and cheese are fully incorporated.
Optionally, add 10 oz of frozen peas and stir until combined; the heat will thaw the peas.
For extra creaminess, optionally stir in 1/2 cup of heavy cream or half and half.
