Preheat the oven to 350 degrees Fahrenheit.

In a large mixing bowl, add 1/2 cup of buttermilk, 2 large eggs, 1/4 cup of oil, 1 teaspoon of vanilla extract, 1/2 cup of white granulated sugar, and 1/2 cup of homemade caramel sauce. Mix with a hand mixer for a couple of minutes until the eggs are well beaten.

In a separate bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1/8 teaspoon of salt. Mix together.

Sift the dry ingredients into the caramel cake batter and mix on low speed for about 1 minute until the flour is incorporated.

Dice 2 large granny smith apples into pea-sized pieces, leaving the peel on. Transfer the diced apples into a large mixing bowl.

Dress the diced apples with 1 tablespoon of cornstarch and 1 teaspoon of ground cinnamon. Toss until well coated.
