Preheat the oven to 350 degrees Fahrenheit.
In a large mixing bowl, add 1/2 cup of buttermilk, 2 large eggs, 1/4 cup of oil, 1 teaspoon of vanilla extract, 1/2 cup of white granulated sugar, and 1/2 cup of homemade caramel sauce. Mix with a hand mixer for a couple of minutes until the eggs are well beaten.
In a separate bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1/8 teaspoon of salt. Mix together.
Sift the dry ingredients into the caramel cake batter and mix on low speed for about 1 minute until the flour is incorporated.
Dice 2 large granny smith apples into pea-sized pieces, leaving the peel on. Transfer the diced apples into a large mixing bowl.
Dress the diced apples with 1 tablespoon of cornstarch and 1 teaspoon of ground cinnamon. Toss until well coated.
Add about two-thirds of the dressed apples into the cake batter and gently fold them in with a spatula.
Prepare an 8-inch springform pan by lining the bottom with parchment paper and spraying the sides with nonstick baking spray. Transfer the cake batter into the prepared pan and sprinkle the remaining diced apples on top.
Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely on a wire rack.
Make the whipped cream by whisking 1 cup of chilled heavy cream with 1/3 cup of confectioners sugar and 1/2 teaspoon of vanilla using a hand mixer for about 3 to 4 minutes until stiff peaks form.
Once the cake has cooled, transfer it onto a cake stand and spread about 1/2 cup of apple butter evenly on top.
Add the whipped cream topping on top of the apple butter and sprinkle with ground cinnamon.
Drizzle homemade caramel sauce over the top of the cake.
