2 carrots, cut into matchsticks
1 cucumber, cut into matchsticks
2 cups red cabbage, cut in slices
1 red bell pepper, cut in slices
1 yellow bell pepper, cut in slices
1 cup hummus
2 cups cooked quinoa or brown rice
1 cup cilantro
1 bunch of collard greens, left whole with thick stalk removed
3/4 cup peanut butter
1/4 cup low sodium soy sauce
1/4 cup apple cider or rice vinegar
1/4 cup water
2 tablespoons honey
1 clove garlic

Peanut Sauce: Place all the ingredients in a blender or food processor. Blend until smooth. Pour into a bowl for dipping.

Roll-ups: Cut out the thick part of the stem/spine of the collard leaf, but leave the rest of the leaf whole.

Spread a tablespoon of hummus on the top quarter of the collard leaf on the left side. Top with two tablespoons of quinoa. Then arrange some of each vegetable on the collard leaf.

Fold the ends in and roll tightly starting on the left with the vegetables and rolling to the other side. Secure with a toothpick if needed.

Store in the fridge for up to 3 days. Makes 6 roll-ups.
