Rainbow Veggie Roll-Up with Peanut Dipping Sauce

These rolls celebrate the vibrant colors and flavors of fresh vegetables, often enjoyed as a light snack or appetizer. They embody the philosophy of using fresh, seasonal ingredients and are typically served with a rich, savory dipping sauce. Today, they have gained popularity worldwide, often adapted to include various fillings and sauces to suit different tastes.

Peanut Sauce: Place all the ingredients in a blender or food processor. Blend until smooth. Pour into a bowl for dipping.
Roll-ups: Cut out the thick part of the stem/spine of the collard leaf, but leave the rest of the leaf whole.
Spread a tablespoon of hummus on the top quarter of the collard leaf on the left side. Top with two tablespoons of quinoa. Then arrange some of each vegetable on the collard leaf.
Fold the ends in and roll tightly starting on the left with the vegetables and rolling to the other side. Secure with a toothpick if needed.
Store in the fridge for up to 3 days. Makes 6 roll-ups.
