Ghanaian Jollof Rice

Jollof rice is a beloved West African dish, with roots tracing back to the Senegambian region. It is often a centerpiece at celebrations and gatherings, symbolizing unity and festivity. Each country has its own variation, but Ghanaian Jollof is celebrated for its rich tomato base and unique blend of spices, making it a staple in both home cooking and festive occasions.

long-grain rice

Paprika offers a milder flavor with less heat.
Marinate the beef with onion, garlic powder, salt, and a bit of oil for a few minutes to an hour.
Air fry the marinated beef until browned and juicy.
Chop onions, green habanero peppers, ginger, garlic, and green bell peppers.
Pulse the chopped ingredients until in small bits, not a paste.
Add the chopped mixture to hot oil and season with Maggi and salt, frying until moisture is gone and oil separates.
Add the beef to the pepper sauce and mix well.
Chop onions and bell peppers for the jalof fries.
Blend onions, ginger, garlic, peppers, thyme, and rosemary, then add to heated oil.
Fry for about 5 minutes until raw smell cooks off.
Add tomato paste and fry until it darkens and sour taste cooks out.
Add blended tomatoes, curry powder, jalof seasoning, and bay leaves, cooking until sauce thickens.
Add jasmine rice to the sauce, mixing well to coat every grain.
Add water based on desired rice texture, then taste and adjust salt as needed.
Cover rice with foil or parchment paper to trap steam and cook gently on low heat until soft and fluffy.
If rice isn't soft enough, drizzle salt mixed with hot water over the top and cover to cook for a few more minutes.
