Make a slit down the side of each green banana to make peeling easier.
Boil the green bananas in water for about 8 to 10 minutes until soft.
Remove the skin from the bananas and dice them.
Rehydrate the codfish in hot water, then drain and flake it.
In a skillet over medium heat, add a little oil and sauté the chopped onion and bell peppers until fragrant.
Add the flaked codfish and thyme to the skillet and stir-fry until heated through.
Allow the sautéed mixture to cool before adding it to the bananas.
Combine the cooled sautéed mixture with the diced bananas and add mayonnaise to bind the ingredients together.
Season with white pepper to taste and mix well.
Chill the salad before serving.
