Smoked Herrings

Cultural Context

Originating from the Caribbean, smoked herrings are a traditional way of preserving fish, especially in Grenada. This method not only enhances the flavor but also extends the shelf life of the fish, making it a staple in local cuisine. Often enjoyed with rice or bread, smoked herrings are a beloved part of many Caribbean households. 1

Prep the ground provisions by cleaning and peeling them, including plantain, green fig, dashing, and sweet potatoes.

2

Cook the ground provisions separately, starting with salt and a little olive oil in the pot.

3

Boil the provisions until cooked, adding salt for flavor.

4

Prepare the dumplings with clean flour, water, sugar, and corn meal, making them stiff by adding less water.

5

Once the water is boiling, add the dumplings to cook.

6

For the smoked herring, boil it to extract some salt and make it easier to remove the bones, adding vinegar to help with the scent.

7

Remove the herring from heat, drain, and allow to cool before cleaning off the bones.

8

Saute garlic, onion, and green seasoning in coconut oil in a saucepan.

9

Add bell peppers and pimento peppers to the sautéed mixture and mix well.

10

Chop tomatoes into medium-sized chunks and add to the sautéed mixture, cooking for about a minute.

11

Gently mix in the smoked herring, being careful not to break it apart.

12

Add cayenne pepper and salt to the mixture, combining well and allowing to sauté for a few more minutes before removing from heat.

13

Plate the smoked herring with the cooked provisions.
