This Is How We Roux It - 7 Layer Dip

Grab a small knife and cut the avocado in half.

Remove the pit from the avocado using a spoon and twist it out.

Scoop out the avocado flesh with a spoon and place it in a bowl.

Check the ripeness of the avocado; it should be soft but not overly ripe.

Cut the tomato in half and slice it, removing the seeds if desired.

Chop fresh cilantro by pinching it together and cutting it finely, including the tender stems.

Prepare cooked chicken by cutting it into pieces and seasoning it with cumin, cayenne, chili powder, salt, and pepper.

Use a 9x13 dish to layer the ingredients.

Spread a layer of refried beans mixed with black beans on the bottom of the dish.

Add a layer of warm chicken on top of the beans.

Sprinkle a layer of low-fat cheddar cheese over the chicken to let it melt slightly.

Add a layer of sour cream on top of the cheese.

Layer diced avocado, chopped tomatoes, cilantro, and green onions on top of the sour cream.

Repeat the layering process with more refried beans, chicken, cheese, sour cream, avocado, tomatoes, and garnishes as desired, including black olives and cilantro on top.

Serve with hearty chips for dipping.
