Heat 4 tablespoons of refined oil in a pressure cooker.

Add 4 green cardamom, 10-12 black peppercorns, 4-5 cloves, 1/2 inch cinnamon stick, and 1 star anise to the oil and sauté for a few seconds.

Add 500 grams of mutton chops that have been cleaned with water and sauté for 2-3 minutes with the spices.

Add 1 teaspoon ginger powder and 1/2 teaspoon garlic powder, mix well, and cook for 2 minutes.

Pour in 1 liter of water and mix well, then add 1 finely chopped large onion.

Bring to a boil on high flame, skimming off any foam that rises.

Cover the pressure cooker and cook on low flame for 15 minutes.

Release the pressure and remove the mutton, setting it aside, while reserving the broth.

In a separate pot, add 300 grams of long-grain rice and 1/2 teaspoon salt to the boiling broth.

Cook the rice on high flame for 3-4 minutes until it starts to swell, then lower the flame and add saffron food color.

Cover and cook on low flame for 15 minutes.

In a separate pan, fry cashews, almonds, and raisins in the leftover oil until golden, then remove them from the oil.

In the same pan, add the reserved broth, 150 grams of yogurt, and 2 tablespoons of corn flour, mixing well to avoid lumps.

Cook this mixture on low flame for 2-3 minutes, adding 1 teaspoon garam masala powder and salt to taste.

Combine the mutton with the yogurt sauce and cook for another 3-4 minutes on low flame.

Layer flatbread on a serving plate, then add the rice, followed by the mutton and yogurt sauce on top.

Garnish with fried nuts and fresh coriander.
