Peel and dice 2 potatoes.
Boil the potatoes in water until tender.
Drain the potatoes and smash them with a fork in a bowl.
Cook 1 chopped onion in 1 tbsp olive oil over medium heat until golden brown.
Add the cooked onions to the smashed potatoes.
Add 10 oz of drained canned tuna, 1 tbsp finely chopped parsley, and 1 tbsp capers to the potato mixture.
Add 1 tsp paprika, 1 tsp cumin, 1 tsp salt, and 1/4 tsp pepper to the mixture and adjust spices to taste.
Prepare an egg wash by mixing 1 egg with 1 tbsp water.
Assemble the spring rolls using the filling and spring roll pastry, sealing with the egg wash.
Fry the spring rolls in hot oil until golden brown, or brush with butter and bake until golden brown.
Remove from oil and drain on paper towels.
Serve the spring rolls immediately.
