7 oz (200g) all-purpose flour
3.5 oz (100g) cold butter
3.5 oz (100g) creme fraiche
1 teaspoon salt
Optional: a bit of dry yeast (dissolved in a bit of water and sugar)
1.25lb (600g) sweet onions, diced
Half a dozen rashers of bacon, cut into small pieces
1 cup of Gruyere cheese, shredded (about 5oz)
1.5 oz (40g) butter
5oz (150g) creme fraiche
Salt & pepper to taste
a pinch of thyme or paprika

Add flour, butter, salt, creme fraiche, and yeast (activated with a bit of water and sugar) to a food processor or mixer, pulse to combine (or knead well by hand) until smooth.

Wrap dough ball in plastic and refrigerate for an hour (or longer).

Melt butter in a pan, add bacon bits and diced onions, sauté until the onions are soft but not browned; then season the bacon and onion mix with salt and pepper (plus either thyme or paprika if you like); mix in the remaining creme fraiche.

Preheat the oven to 400F, and line a sheet pan with parchment paper.

Roll the dough out and press it out flat onto the parchment paper.

Spread the topping evenly on the crust, and sprinkle shredded gruyere cheese on top.

Bake for about 40 minutes, or until the cheese is evenly melted and golden browned, and the crust is firm.
