Remove leaves and stalk from the whole cauliflower and place it in a heatproof bowl.
Cover the bowl with plastic wrap and microwave the cauliflower for 8-10 minutes until it starts to get tender.
In a mixing bowl, combine 1 tablespoon of adobo seasoning with 3 tablespoons of olive oil and mix well.
Brush the seasoning mix all over the outside of the steamed cauliflower.
Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
Place the seasoned cauliflower in the oven and bake for about 30 minutes until golden brown and cooked through.
While the cauliflower is baking, prepare the cheese sauce using cream cheese, butter, Parmesan cheese, and herbs and spices (details in previous videos).
Fry and chop 6 strips of bacon for topping.
Chop fresh chives for garnish.
Once the cauliflower is done, check doneness by inserting a knife into the center.
Remove the cauliflower from the oven and place it on a serving plate.
Pour the cheese sauce over the cauliflower, adding as much as desired.
Sprinkle the chopped bacon and chives on top of the cheese sauce.
Slice the cauliflower into wedges for serving, if desired.
