Chop a large head of cauliflower into florets, cutting it in half, then quarters, and removing the core.
Transfer the cauliflower florets into a large bowl.
Melt 2 tablespoons of butter and drizzle it over the cauliflower.
Season the cauliflower with salt and pepper to taste and stir to mix evenly.
Transfer the cauliflower to a small baking dish and roast at 450°F for 25 to 30 minutes, stirring halfway through.
While the cauliflower is roasting, chop 1/4 cup of green onions, using just the green parts if preferred.
Mince 2 cloves of garlic, using fresh for the best flavor.
In a bowl, whisk together 2/3 cup of sour cream and 1/4 cup of heavy cream until smooth.
Add 3/4 cup of shredded cheddar cheese, 2 tablespoons of chopped green onions, and 3 tablespoons of chopped bacon to the sauce and stir to combine.
When the cauliflower is done, poke it with a fork to ensure it's tender, then transfer it into the bowl with the sauce and stir gently.
Transfer the mixture back into the casserole dish and top with the remaining shredded cheddar cheese and bacon.
Bake for an additional 5 to 10 minutes until the cheese is melted.
Sprinkle the remaining green onions on top before serving.
