1/2 cup granulated sugar
1/4 cup orange juice
1/4 cup cherry juice
2 cups Bing cherries, pitted
1/4 cup brandy
1 pint vanilla ice cream
for garnish fresh mint sprig

Mix together cornstarch and sugar in a bowl.

Add orange juice and a little cherry juice to the cornstarch and sugar mixture to create a thickening solution.

Warm the remaining cherry juice in a pan over medium heat until it starts to bubble.

Once the cherry juice is bubbling, add the thickening mixture a little at a time to avoid lumps and burning.

Wait for the mixture to thicken and become opaque before adding brandy.

Carefully add brandy to the thickened mixture, standing back as it may flame.

Fold in the Bing cherries gently to coat them with the mixture.

Serve the warm cherry mixture over vanilla ice cream immediately, optionally topping with fresh mint.
