Avocado oil has a higher smoke point and is healthier.
Start by mixing 1.5 cups of warm water with 2 tablespoons of sugar and 2 teaspoons of yeast in a bowl.
Let the yeast mixture sit for about 3-4 minutes until it starts to bubble and activate.
In a separate bowl, combine 3.75 cups of all-purpose flour and 2 tablespoons of kosher salt, mixing them together.
Add the yeast mixture and 1/4 cup of olive oil to the flour mixture and mix on low speed until incorporated, then increase speed for about 4 minutes.
Coat the outside of the dough with a thin layer of olive oil and cover it with plastic wrap to proof for about 1 hour to 2 hours until it nearly doubles in size.
After proofing, punch down the dough and roll it out into a rectangular shape about 1/2 inch thick, using olive oil to prevent sticking.
Spread about 1.5 sticks of softened butter evenly over the dough.
Sprinkle 1/2 cup of everything bagel seasoning and 1 cup of sliced scallions over the buttered dough, followed by a pinch of salt.
Roll the dough tightly from one end to the other to form a tubular shape, then coil it up like a snake and pinch the seams to hold it together.
Place the coiled dough into a preheated 375°F (190°C) 8-inch cast iron skillet, ensuring it covers the bottom.
Drizzle a little olive oil around the edges of the dough in the skillet and let it sit for a few minutes to start browning.
Bake in the oven for 10 minutes, then check for browning and carefully flip it over using a long spatula.
Return the flatbread to the oven for an additional 10-15 minutes until golden brown and cooked through, checking that the center is not doughy.
