Start with 3 pounds of baby gold potatoes.
Melt 2 tablespoons of beef tallow or butter and toss with the potatoes until evenly coated.
Preheat the Traeger to 500 degrees Fahrenheit.
Place the potatoes on the Traeger for about 20 minutes until fork-tender.
Remove the potatoes from the Traeger and add 4 tablespoons of beef tallow, tossing to coat in the residual heat.
Season with 1 teaspoon of garlic powder, black pepper, dried rosemary, and optional red pepper flakes.
Use the bottom of a heat-proof glass or Yeti tumbler to smash the potatoes on a half sheet pan.
Arrange the smashed potatoes on the pan, making sure they fit, or split them between two pans for extra crispiness.
Return the pan to the Traeger at 500 degrees for 30 to 40 minutes until crispy and golden brown.
Once done, sprinkle with kosher or flaky salt and fresh parsley or chives before serving.
