How to make a coffee cupcake
Recipe Information
Irish Coffee Cupcakes
Put 1 tablespoon of hot water in a bowl.
Add 1 tablespoon of instant coffee to the hot water and mix.
Add 120 grams of soft butter to the bowl and mix with a fork until well combined.
Add 140 grams of sugar to the mixture and whisk it together.
Add 2 eggs one by one, whisking after each addition until well mixed.
Add 2 tablespoons of milk and mix well.
Sift 140 grams of flour into the mixture and mix until combined.
Add 1 teaspoon of oil to help the cupcakes not stick to the paper tins.
Prepare a mini cupcake pan and fill it with the batter, leaving space for rising.
Preheat the oven before baking the cupcakes.
Bake mini cupcakes for 10 to 15 minutes, checking for doneness with a toothpick.
After 10 minutes, check the cupcakes with a toothpick; if it comes out clean, they are done.
