Slow Cooker Split Pea Soup with Ham and Potatoes

Finely chop one medium yellow onion.
Finely chop two celery sticks.
Dice up two cups of ham.
Thoroughly wash the yellow split peas and pick out any debris.
Set a heavy soup pot or dutch oven over medium-high heat and add a tablespoon of olive oil.
Saute the ham until golden brown, then transfer to a plate and set aside.
Add more oil to the pot and saute the celery and onion until softened and golden.
Add chicken broth and water to the pot.
Add the rinsed yellow split peas and cooked ham, then bring everything to a boil.
Skim off any foam that forms on top.
Add fresh thyme sprigs, bay leaves, salt, and black pepper.
Reduce heat to a simmer, partially cover, and let cook for an hour and a half, stirring occasionally.
Prepare potatoes and carrots by peeling and chopping them into bite-size pieces.
Add potatoes and carrots to the soup pot, bring back to a boil, and continue cooking for another 20 minutes until fork-tender.
Remove any ham hock if used, and take out the thyme sprigs and bay leaves.
Press fresh garlic into the pot and add fresh dill, then stir to combine and take off the heat.
