Activate the yeast by mixing 250 milliliters of lukewarm water with 7 grams of yeast and a little pinch of sugar. Let it sit for around 10 minutes.

In a separate bowl, mix 370 grams of flour, 80 grams of sugar, a little pinch of nutmeg, and half a teaspoon of salt until evenly combined.

Combine the activated yeast mixture with the dry ingredients and add half a tablespoon of oil. Mix everything together.

Knead the dough for around 10 minutes until smooth.

Transfer the dough to a pre-greased bowl and cover with a damp towel. Let it rest for around 30 minutes to an hour until it doubles in size.

Towards the end of the rising process, fill a cast iron pot or deep fryer with 1 liter of neutral flavored oil for frying.

Once the dough has doubled in size, form small balls by pressing dough with your thumb and index finger and dropping them into the hot oil.

Fry the dough balls for around 5 minutes or until golden brown. Remove them with a strainer and let them drip off excess oil on a plate covered with paper towels.

Sprinkle cinnamon sugar on the fried fat cakes before serving.
