Chia seeds provide natural thickening.
Wash the strawberries and remove the tops.
Dice the strawberries into small pieces.
Place the diced strawberries into a large skillet.
Add 1 cup of granulated sugar to the strawberries.
Add 1 tablespoon of lemon juice to the mixture.
Let the strawberries and sugar sit for about 15 minutes to become syrupy.
Crank up the heat and warm the mixture until the sugar melts and it becomes shiny.
Bring the mixture to a simmer and let it simmer for about 10 to 15 minutes.
Mash the strawberries with a potato masher to your desired consistency.
Once thickened, bring the mixture to a rolling boil.
Stir constantly until the mixture reaches 220 degrees Fahrenheit on a candy thermometer.
Remove from heat and skim off any foam on top.
Pour the jam into a sterilized jar while it's hot.
Put the lid on the jar while it's still hot.
Let the jam sit until it reaches room temperature, then refrigerate to firm up.
