Add 3 cups of chopped strawberries to the Instant Pot.

Add 100 grams of organic jaggery powder to the strawberries.

Add 1 tablespoon of lemon juice and mix well.

Close the lid and let the mixture rest for about 1 hour.

After 1 hour, open the Instant Pot to see the strawberries soaked and juicy.

Close the lid again and set the Instant Pot to manual mode on high temperature for 2 minutes.

Once the pressure releases naturally, open the lid and mix the contents well.

Blend the mixture on high mode for a smooth jam or on low mode if you want some strawberry chunks.

Cook the blended mixture on normal temperature for about 20 to 30 minutes until it thickens, stirring occasionally to prevent sticking.

Taste the jam and add more jaggery powder if desired, mixing well.

Once cooled completely, the jam will thicken even more.
