Traditionally made during the summer when strawberries are in season, it serves as a sweet reminder of warmer days. In many cultures, homemade jam is a staple on breakfast tables, often spread on toast or used in desserts. Today, strawberry jam is popular worldwide, with countless variations incorporating spices or other fruits.

Chia seeds provide natural thickening.
Cut the strawberries into four pieces.
Add 1 pound of chopped strawberries to the inner pot of the Instant Pot.
Add 1/3 cup of honey to the strawberries and mix well.
Close the lid and seal the vent.
Cook the strawberries for 3 minutes under high pressure.
Turn off the keep warm button once the Instant Pot is done cooking and let the pressure release naturally for around 10 to 12 minutes.
Once the pin goes down, open the lid to check the strawberries.
Mash the strawberries with a potato masher or make a fine puree using a blender.
Turn on the sauté mode to let the liquid in the jam reduce.
Take out the foam as it starts thickening.
Add lemon juice and cook for another couple of minutes to help form the jam-like consistency.
Cancel the sauté mode and add chia seeds or chia seed powder to the mixture.
Mix well to combine the chia seeds, which help to thicken the jam.
Take out the inner pot and let it cool down completely.
Transfer the jam to a sterilized glass container.
