Sift or whisk together 1 cup cake flour, 3/4 cup superfine white sugar, and 1/2 teaspoon salt in a bowl.

Beat 1 and 1/2 cups egg whites and 1 and 1/2 teaspoons cream of tartar until soft peaks form.

Gradually beat in another 3/4 cup superfine sugar, a tablespoon at a time, until the meringue holds stiff peaks and is thick and glossy.

Sift the flour mixture over the egg whites about 1/4 of the flour mixture at a time and gently but quickly fold the flour into the egg whites, being careful not to overfold the batter.
