Toast the english muffins until golden brown.
Cook the prosciutto in a skillet over medium heat until crispy, about 2-3 minutes.
Fill a pot with water and add white vinegar; bring to a gentle simmer.
Crack each egg into a small bowl, then gently slide into the simmering water one at a time.
Poach the eggs for 3-4 minutes, until the whites are set but yolks remain runny.
Remove the eggs with a slotted spoon and drain on paper towels.
In a saucepan, melt butter over low heat; whisk in lemon juice and season with salt and pepper.
Slowly whisk in hollandaise sauce until smooth and warmed through.
Assemble the dish by placing a slice of prosciutto on each toasted muffin half.
Top each with a poached egg and drizzle with hollandaise sauce.
Garnish with chopped fresh parsley and additional black pepper.
