Heat some oil in a pan and brown the beef bones to give them a smoky taste.

Transfer the browned bones into a pot and cover with a lot of water.

Boil the bones for at least three hours, adding water occasionally as needed.

Add shallots (or onions if shallots are unavailable), garlic, ginger, paprika, curry powder, black pepper, and dry herbs to the pot.

Cover the pot and let it boil for three to five hours, checking occasionally.

In a blender, combine onions, shallots (if using), garlic, and a cup of water; blend until smooth.
