1/2 cup cornstarch
3/4 cup oil
3/4 cup orange marmalade
1/3 cup barbecue sauce
3 tablespoons soy sauce

Combine all the sauce ingredients together in a bowl.

Place eggs into a shallow dish, and combine flour and cornstarch in another shallow dish.

Heat 3/4 cup oil in a pan over medium high heat and cook chicken in 2 batches. Cook until cooked through, this will take about 6 minutes per batch.

Remove chicken, set aside, toss excess oil and wipe pan clean.

Pour the sauce into the pan. Season with salt and pepper and bring to a boil. Stir in chicken and remove from heat. Serve immediately over rice.
