Chicken is leaner and often less expensive than beef.
Preheat the oven to 375°F.
Prepare the filling by mixing cream cheese, spinach, minced garlic, diced onion, and chopped bell pepper in a bowl.
Lay out beef slices on a clean surface and season with salt, black pepper, and Italian seasoning.
Spread the filling evenly over each beef slice.
Place a few slices of mushrooms on top of the filling.
Roll each beef slice tightly from one end to the other and secure with toothpicks.
Heat olive oil in a skillet over medium heat until shimmering.
Sear the beef rolls in the skillet for 2-3 minutes on each side until browned.
Transfer the rolls to a baking dish and cover with foil.
Bake in the preheated oven for 20-25 minutes until cooked through.
Remove from the oven and let rest for a few minutes before serving.
Remove toothpicks and slice the rolls for serving.
