No-Skewer Chicken Satay

Cultural Context

Originating from Indonesia and popularized in Thailand, Chicken Satay is a beloved street food featuring skewered and grilled meat served with a rich peanut sauce. Traditionally, satay is served on skewers, but this no-skewer version makes it easier to prepare and enjoy at home. Today, variations abound globally, with many countries adding their own twist to the marinade and sauces.

1

In a mortar and pestle, grind coriander seeds, cumin seeds, and white peppercorns into a powder.

2

Add brown sugar, salt, turmeric powder, cinnamon, tamarind, and coconut milk to the ground spices and mix well.

3

Transfer the marinade to a mixing bowl.

4

Cut chicken breast into half-inch thick strips, slicing against the grain for tenderness.

5

Marinate the chicken in the mixture for a couple of hours or while making the peanut sauce.

6

Roast peanuts and grind them in a food processor until mealy, not peanut butter.

7

In a pot, add a third of a cup of coconut milk and bring to a boil.

8

Add red curry paste and stir frequently for about three minutes until thickened.

9

Add the remaining coconut milk, ground peanuts, tamarind, and palm sugar, and simmer until thickened into a dip consistency.

10

Taste the sauce before adding fish sauce to adjust saltiness.

11

Preheat the grill on high and grill the marinated chicken with the lid open for a few minutes on each side until cooked through.
