Pour self-raising flour into a food processor.

Add normal granulated sugar and butter (at room temperature) to the food processor.

Add a pinch of salt and 1 teaspoon of baking powder.

Close the food processor and mix for no more than 10 seconds until blended.

Break in 1 egg and add approximately 25 ml of sunflower oil.

Place the mixture on a piece of clean film and squeeze together to form a ball.

Refrigerate the ball for 20 minutes to rest.

Push 250 g of ricotta through a sieve to make it fluffier.

Add icing sugar to the ricotta and blend together without a food processor.

Grease a baking tin with butter and line the bottom with reusable baking paper, dusting with flour to prevent sticking.

Remove the dough from the fridge, cut it into two parts (one larger for the base), and press the larger part into the baking tin to form the base and edges.
