Dissolve 2 1/4 teaspoons of active dry yeast in 1/4 cup of warm water (between 100 and 110 degrees) and stir in 1 teaspoon of sugar. Let sit for 10 minutes until bubbly.

In a bowl, whisk together 5 cups of flour, 1 teaspoon of baking powder, and 1 teaspoon of salt.

Beat 3 eggs and add 1/2 cup of evaporated milk, 1/2 cup of sugar, and 1 stick of melted butter.

Pour the wet ingredients into a food processor fitted with a dough blade, then add the proofed yeast.

Dump in all of the flour mixture and mix until it grabs onto the dough hook.

Dust lightly with flour and knead for 10 minutes until smooth.

Shape the dough into a ball, place it in a bowl, cover, and let it rise for 2 hours.

After 2 hours, punch down the dough and cover again, letting it rest for another 30 minutes.

Take a small pinch of dough (about the size of a small meatball) and roll it out. Avoid using too much flour to prevent dryness.

Coil the rolled dough and tuck the tail under to shape it.

Prepare an egg wash with 1 whole egg and 1 tablespoon of half and half, then brush it over the shaped dough.

Sprinkle the dough with regular and black sesame seeds for garnish.

Place the shaped dough on a baking sheet and let it rise again before baking.

Bake in the oven for 20 to 30 minutes until they are medium brown on the bottom and light brown on top.
