Start by preparing the ingredients for the whoopie pies.
Use 1/2 cup of lard instead of vegetable oil, adding 1/8 cup more than you would for oil.
In a mixing bowl, cream together the lard, 5 cups of sugar, and 6 egg yolks.
Add 2 tablespoons of vanilla extract to the mixture.
Dissolve 1/8 cup of cocoa powder in hot water and mix until fully dissolved, then add to the egg and sugar mixture.
In a separate container, measure 3 cups of cultured buttermilk and add baking soda to it, stirring to combine.
Add 8 cups of flour to the mixture, mixing by hand as there isn't enough room in the bowl for all the flour.
Bake two cookies to test the batter; if they turn out too flat, add more flour as needed.
Check if the cookies are done by touching the center; it should spring back slightly.
Prepare the filling while the cookies are baking, opting for a buttercream frosting instead of the traditional shortening filling.
