Add 6 cups of powdered sugar (681 grams) to a bowl.
Add 1/2 cup of all-purpose flour (60 grams) to the powdered sugar.
Add 2 1/2 cups of Crisco to the bowl.
If making peanut butter filling, use 1 1/2 cups of Crisco and add 1 cup of peanut butter instead.
For jam filling, substitute 1 cup of jam for peanut butter.
Add a pinch of salt and 1/2 cup of ice cold water to the mixture.
Add 1/2 teaspoon of strawberry extract and 1/2 cup of strawberry powder.
Beat the mixture on high for 15 minutes and chill for at least an hour before using.
For the cookie part, add 1 cup of shortening to a mixing bowl.
Add 2 cups of sugar and 2 eggs to the shortening and mix.
In a separate bowl, combine 1 cup of water with 4 tablespoons of buttermilk powder and whisk until hydrated.
Add the hydrated buttermilk to the mixture.
Add 2 teaspoons of vanilla extract to the mixture.
Sift 4 cups of flour and cocoa powder together to avoid lumps.
Dissolve 2 teaspoons of baking soda in 1 cup of cold water and add to the mixture.
Mix until combined without incorporating too much air.
Grease stainless steel baking pans or use Pampered Chef stones.
Using a cookie scoop, drop batter onto the prepared pans.
Bake at 350°F for 13 minutes, testing a cookie first to check for desired texture.
Once baked, let cool before assembling the whoopie pies.
Spread filling on the flat side of one cookie and top with another cookie to form a sandwich.
Wrap the whoopie pies in saran wrap for storage or transport.
