Preheat oven to 350 degrees F.
Shred kohlrabi into hash browns and place it on paper towels. Sprinkle with salt and let it sit.
Saute the veggies (onion and bell pepper), bacon, and butter until tender and onions are translucent.
Add half of the spices to the veggies and the other half to the beaten eggs.
Remove from heat and let cool for 5-10 minutes.
Squeeze the liquid out of the kohlrabi hash browns.
In a large mixing bowl, combine kohlrabi, veggies, eggs, cottage cheese, and 6 ounces of shredded Colbyjack cheese.
Spray an 8 X 8 or 9 X 9 baking dish and add the frittata mixture.
Bake for 25-30 minutes until the eggs are done.
Remove from the oven and top with remaining cheese.
Place under the broiler for 2-5 minutes until the cheese is melted to your liking.
Let cool for a few minutes, then cut into four servings.
